Almond Crusted Chicken

After I started making almond milk (recipe here), I wasn't sure what to do with the almond pulp once the milk is squeezed out.


We've previously tried to mix up our chicken recipes by coating the chicken cutlets in something, like the cracker chicken here (so good).


The almond pulp after almond milk making can be used to coat the chicken too!


Steps:

1. Spread the almond pulp onto paper towels and pat dry (can add some salt to dry more)

2. Place dried almond pulp into a bowl

3. Beat eggs in a bowl

4. Pat chicken cutlets/breasts dry

5. Coat chicken in egg, then in almond pulp

6. Sautee, bake, or grill to temperature.
